On days that I crave for a savoury breakfast, I think of smoked salmon toast! It also makes a perfect option for lunch which is light and healthy and of course quick to make as well. It includes great ingredients like smoked salmon, avocado and pea sprouts.
Smoked salmon - Great source of omega-3 fatty acids which can ease inflammation, preserve brain function and structure. However smoked salmon tends to be higher in sodium compared to fresh salmon so I would recommend to consume it with moderation.
Avocado - Great source contains omega 3 fatty acids as well. It also a good source of fiber, folate and vitamin K.
Pea Sprouts - High in antioxidants and carotene which helps our body to fight against free radical. For this recipe you can also use alfalfa sprouts or any other microgreens.
I also love how all the ingredients come together so well in term of texture and flavour, and it is sure to satisfy!
Ingredients - 1 slice of bread (I use sourdough) 4-5 slices of smoked salmon a handful of pea sprouts ( or alfalfa sprouts) half an avocado, sliced salt and pepper a slice of lemon (optional) a tsp of sour cream (optional)
Instructions - Toast the bread till crispy. Layer it with sliced avocado, smoked salmon and pea sprouts. Sprinkle salt and pepper to taste. Optional - Squeeze a slice of lemon over, followed by sour cream.
