Spinach & Feta Quesadilla

This recipe is perfect for any meal of the day and easy to make with only 5 ingredients - bell peppers, baby spinach, egg, feta cheese, and cheddar cheese. It is easily customized depending on what do you feel like putting together for the filling.


For the vegetables, you can use either green, red, or yellow bell peppers, or all! Bell peppers are my favorite which gives out a natural sweetness and it’s also a great source of vitamin C so try not to cook it for too long.


Spinach is a great source of Iron so what do we have here is -


Bell peppers ( Vitamin C) + Spinach (Iron) = perfect combo to increase the Iron absorption

For the cheese, you can replace the cheddar cheese with any other cheese such as parmesan cheese, mozzarella cheese. The reason why I choose cheddar is that I really like the sharp, bodied-rich flavor of it and I also find it perfectly balances out the salty taste of feta cheese.


I am using the aged cheddar cheese for this recipe which the taste is even stronger but it just tastes good to me. But if you don’t really like cheddar then I would suggest something milder such as mozzarella.


You can also replace the egg with chicken or any other type of protein that you like! Play around with different ingredients and see which ones suit you best! :) Leave a comment below since I would love to hear how would it turn out for you!


For time-saving, I would recommend you to prepare the quesadillas in batches and keep the extra ones in the freezer. Take it out from the freezer and reheat it using a toaster or oven for 2-3 minutes and it's good to go!


Ingredients -

1 egg

1/4 cup of chopped bell peppers

a hand full of baby spinach

1/4 cup of feta cheese

1/2 cup of cheddar cheese

1 piece of whole-grain tortilla

salt & pepper to taste (optional)

onion, either purple or white (optional)


This proportion is to fit in 1 tortilla and be divided into 3-4 pieces of quesadillas. If you want to make more, feel free to increase the portions of the ingredients accordingly.


Instruction -


Chop the spinach, bell peppers and feta cheese. Crumble the feta cheese.


Crack and beat the egg in a separate bowl. Drizzle the pan with olive oil to make a scrambled egg. You don't have to cook the egg for too long now since we will continue to cook it further while making the quesadillas. Put in the onions and bell peppers and continue to cook with the egg for another 1 minute. Optional to season it with some salt ( a pinch of salt with do since the saltiness will be coming from the cheese once we put together the mixture. I personally don’t put in any extra salt to control my sodium intake).


Remove the mixture from the pan and mix it with the rest of the ingredients - spinach, feta cheese and cheddar cheese.


Heat up the pan in low heat and lay down the tortilla. Scoop up the mixture on 1 half of the tortilla. In any case that your filling seems too much, don't overstuff the tortilla since it might be harder for you to fold and flip it over

Spread the filling evenly and fold the other half over. Continue to cook for another 1-1.5 minutes or till the facing-down tortilla gets crispy. Use the spatula to gently flip to the other side. Continue to cook till it gets crispy.



Remove the folded tortilla from the pan and let it cool down for another 1 min. Slice it into 3-4 pieces and here you have it, the Spinach & Feta Quesadillas!
